Named for the mountains in Mexico from which they hail, these hot little Serrano Peppers pack a fiery heat. Ranging in color from green to yellow, orange, and red, they are hotter and smaller than their cousin, the jalapeño. Use them to add a spicy bite to salsas, dips, pickles, or chili oils—remove the inner ribs and seeds for less heat. Serrano Pepper Hotness measures between 10,000 and 25,000 Scoville units.
